One thing I never got to see, but would have loved to, are the mummies at St Michan's (http://www.irelandforvisitors.com/articles/mummies_of_st_michans.html), the church where Handel's Messiah was (supposedly) first performed. It's in Woodquay, near the Corpo's offices. Next time I'm back!
